Not sure why you'd think that. Toriyama only did initial character designs, and had no story input. Plus, the new Dragon Ball Online game, which Toriyama is working on, is set hundreds of years in the future and ignores GT.

I suppose you could say that GT is canon in the anime universe, since it, I don't know, exists. But I'm only concerned with the manga.

But that doesn't mean you can't enjoy GT, or the movies for that matter.

It's widely belived to be non-canon due to the fact that it wasn't produced as manga like its predecessors. Also, he did have story writing influence in GT, just not to a degree like Dragon Ball or Dragon Ball Z. And while Dragon Ball Online ignores the GT timeline, that could be considered non-canon too, as well as a number of anime filler instances in both DB and DBZ. Funny thing is GT has no filler (ie, useless events) and the least amount of inconsistencies that both DB and DBZ are known to have hundreds for. But at the very least, Toriyama did have a degree of storywriting influence in GT and a hand in its creation.

Well, you pretty much just proved my point. It's widely believed to be non-canon, because canon, for the most part, is based on belief.
"Canon" is a tricky thing in any franchise, and pretty much just comes down to each fan's choice of when to say "when." And if you ask most hardcore DB fans, they'll tell you GT doesn't count. It's on the same level as the DBZ movies. Basically, it has no filler because it IS filler.
DBZ is closer to something like Harry Potter than Spider-Man, because DBZ comes from the mind of a singular author, and is not a never ending story with hundreds of writers. So by that logic, the only undisputably canon part of the story is officially over when Toriyama stops writing. From that point on, it's up to each fan to pick and choose what they like.

Oh. Okay, I still believe GT is canon though, despite advice to the contrary, but you're right. Although it does get old when DB fans are still disputing this subject. Let it be canon to those who choose to let it be, and those who don't belive don't have to. Still, GT is very interesting and it's actually cool when you watch it.

Oh yeah. I enjoyed the heck out of most of GT for a lot of the reasons you mentioned, plus the fact that it was very Goku-centric, unlike a lot of DBZ, in which Goku is always somewhere else while Gohan and Vegeta take the lead.
But as Toriyama fan first and a DB fan second, for me, DB stops when Toriyama does. Everything else is just Imaginary Stories or What If scenarios.

Yeah, I understand that part. But, whether he stops or not, Dragon Ball will still be one of the greatest anime series of all time.

That's true of any great story. It outgrows and outlives it's creators.
