CMYK can matter if you're doing very high-end printing, but most inkjet printers will automatically convert the RGB to CMYK images anyway, and with a little tweaking you can generally make it pretty close. I think it may be more important in Illustrator things like he usually does, but for painting, the color limitations and the fact that many PS brushes don't work in CMYK mode seem to negate its usefulness for me.
