With this density (mostly) paper white and a little black, I over expose 2 stops and then adjust level so that the whitest value is about 245 or so (out of 255) them pull the black values down but keep as much shadow detail as you can. Also (for B&W)before adjusting the level I usually reduce saturation (typically -90) this would be different depending on the color cast you want based on the original.

thats kind of you - and I will try those suggestions -
I seem to find it hard to get a neutral white and I know that is white balance...
and was wondering about using grey card for exposure....

You can use the gray card twice. Use it to determine best exposure for making the original image and if you include a bit of gray in the margin use it in PShop to adjust for middle gray in the digital image. You can also use color swatches in the margin and remember that tints are often more helpful in color adjusting than strong saturated color. Good luck
