You plan to use winrar to self extracting archive or some other software?
Anyway:
1.Open RinRAR or other program which you plan to use
2.Select files that way [link]
3. Make self extracting archive (actually I don't use WinRAR to make self extracting archive, so can't provide exact guide how to do it, but you can easily google it)
4. when you selected files that way, then directory to install should be named as "C://program files/iTunes"
