Yes, but they still break down and age in some way. Their life is prolonged but it doesn't mean that they won't change. Even some things that taste better matured need watching.

Of course boiled potatoes can rot after drying them! I don't know how you cook your potatoes but (I'm not sure I want to if they don't rot!) I'm not sure where you got that idea from.
