Oh wow! That must be a big change, I hope it is going well. I've been gluten free since I was two so I've never had such a big adjustment. I do admire those who have gone through it and have stuck with the diet.

I've been substituting regular flour for gluten free flour as well. My mom prefers baking from scratch and following recipes from gluten free cook books however because it is what she is use to since gluten free was so rare back in the '90s. I am extremely glad that isn't so any more.

Good luck with the diet! If you ever need any support, encouragement, or information I will be happy to help. :)

Have a great day!

Thank you :) wow thats along time to be gluten free but good you don;t know any different :)
I first tried gluten free ten years ago and gave up with it as even then it was so hard to find gluten free stuff, all i could find was the bread and it was horrible!
This time round it hasn't been so bad, i am on a very restrictive diet anyway, bread was the hardest thing to replace as i was eating so much of it before but now when making my kids sandwiches even the smell of bread makes me feel ill, never noticed sliced white bread has a nasty fake smell about it before now so i am glad i don't eat it anymore. The only thing i really miss is certain biscuits i used to love.

Biscuits as in rolls of bread or biscuits as in cookies? Where I am from biscuits are rolls/bread but I know in other places they are cookies. If you are talking about the bread one there is a Bisquick mix (not sure if you have that depending on where you are) that makes these amazing biscuits. It's on the back of a box that says waffle and pancake mix, both of which are also really good, especially when you add cinnamon, vanilla, and brown sugar.

Ah got it! I always have to clarify between the two since I know people from all over. There are some good cookie mixs but the best one has come out of my mom's cook book but only when mad by her. I am rubbish at making cookies. :D
