Yep! It's slightly different than pumpkin carving, but the basics are all there.
is it harder?
Not really, just different. Like with shading, you have to use a slightly different technique because it's thinner than a pumpkin. I'd say the hardest part is trying to get edible sized pieces of watermelon out from the inside.
