Read your journal and those are good assessments of Simon's backstory. Here are some things that I think are going on.
In Holly Jolly Secrets part 2 you can see in the 2nd entry of the confession a golden plane flying in the background in the window just before a snow storm comes. That could be the start of the great mushroom war signaled by what could be a nuclear winter.
In I Remember You Marcy shows Ice King a photo of himself with The Enchiridian. Could the Enchiridian have the answer to breaking the spell the crown has on Simon?
There has been a lot of speculation that PB has Bettie's DNA as her base but also Dr. Princess wears the glasses, lab coat and turtle neck. However In "I Remember You" as Simon look at Ice King's breast pocket. See the lil pink gummy bear thing? It's the same one PB has on her lab coat breast pocket in "Goliad".
Just some thoughts on stuff I noticed. Isn't AT a great show?

The gummy bear thing is a scientific parasite it is only there because it feeds on intelligent brain waves
