Several fanfics addressed this, including one where Spike marries Apple Bloom, and that question comes up. Eventually she dies, but Spike's happy that he made her short life that much better. He also says he'll never forget her, even after he finds a new mate, he tells her all about the love of his life... and his children!

That explains some of the videos, but that's kinda menh xD I never put much stock into fanfic (even my own).
That's always been mlp (I mean since g1 obv). I've never given much thought since g4 is the only one that held my interest enough (Minus the fact when my cousin came over, we usually watched g1 xD I guess that's why I knew AJ when they showed her). I mean I have thought it was funny that their names always seemed to match what they are like/do, but it's never been a subject that I put much thought in since it doesn't affect the entirety of the show. It's just a miniscule issue for me, you know?
Yes and no, sorta xD They had a somewhat memory lapse/misplacement too, since they regained them when their CM's returned. It was a spell to make them think that was their job and I'm sure if they had simply switched without a incantation, they would have known obv.
But it was just never a big issue as I said. I remember seeing a comic where a pony wrote something like that about how "A pony is forced to find it's special talent and be marked against it's will" (Or something to that extent, it has been a couple years since I seen it, so I may be misquoting, but it was in that area), to which Celestia replied, tl:dr.
I imagine when they want us to know how it works, they will say. I also remember seeing a game or story (Can't remember. Prob could google it easy) where it showed the very first one to get a cutie mark, but (it was darkside) they killed her because of it x.x But as I noted earlier, fanfic I put little stock into.
