I do really like charts like these, as they help you think out your world and the make up of your characters even more 
It also gives you a springboard when making new characters, so that you don't have to fret over details you may not have considered important.
As you said, though, there are exceptions, and there most certainly should be! As people are different, so are the characters in your world Funnily enough, though, I've been thinking about doing this for most of my cast as well, though I wanted to go on a character basis rather than a species one. This had the advantage of being clean and clear as a reference though.
