The icon for the root terminal in my OS 12.1 is utilities-terminal_su (yes, first hyphen, then underscore). I have a very bad memories with those things, but this time I am sure, that I have not changed the icon yet which means that this has to be the default.
The gksu-root-terminal icon I have now spotted and use it. Nevertheless all the root stuff is something where I would accept little dots of red in it to signalize a nice little "keep your hands off unless it is really necessary...".
And that not all applications may use their new icon when they are running is something I can accept. More important is that there where I rule, on the desktop, they have the disguise that I have chosen for them.
I think I can promise you to submit a nice screenshot featuring also your icons in some weeks. Today I used the boredom of a train ride to improve my conky.conf. Therefore now my desktops look awful, but when all my good ideas will have settled and I have found all the appropriate tiny changes everything will look better than ever - I hope.
