Yeah, I feel you.  I've got so many stories in my head that it's sometimes hard to just focus on one or two.  The burden of a writer i suppose.  Right now I've narrowed it down to one written book and one graphic novel project with another stored away for later.   Yep, hard to decide which ones to do.  And yeah, I think you should try to get a publishing company to publish your writing.  You've got what it takes and totally have imagination.  Just make sure you get one of those contracts that pays you as long as you're working on a book and not one of those when they give you one big lump some (because then you have to keep working even if your lump of cash runs out).  Royalties would be a good thing to ask for too.  I've never published anything, but my cousin is a published author and the lump some thing is something that he warned me against.  You should give it a go.
