how do you make the decorations that cover the whole surface of the hiltparts without them falling apart?

Small grooves, which widen to the bottom, are cut into iron surface and copper / silver wires are forged into them, so that they do not whole sink into groove, but wide onto iron surface as well.

so you first make a channel with a flat chisel and then undercut that channel to both sides?

Thats one way, its also possible to use some "mini" metal saw, that can be mainly used for some jewelry work and such.
