The Mississippi is already trying to change course. The only thing preventing it is man-made intervention. See this page: www.wunderground.com/blog/Jeff… There is little to no chance the river would take the exact same route it took in the modern era after massive flooding like this. In fact, the river changing directions would actually potentially be beneficial as it would actually shorten travel times up the river and allow ocean going ships to travel farther up the deeper body of water. The only reason humanity is preventing (barely) the natural change in direction because their is a crap ton of industry and two major cities that rely on the river that would be left high and dry should the river change course naturally. With the amount of destruction and geographical change brought by global flooding in this scenario, the incentive to hem in the river would disappear (not to mention be impossible with the change in geography) and  in fact it would be better to simply let the river cut its own path again and just start over from scratch
