Ya Sephiroth does make people his bitch but I find reflect is useful to kick his ass with.
Personally, it's all a matter of knowing the trick. 
KH1 Sephiroth = Strike Raid spam, KH2 = Having the right abilities set, like all the level 3 Form Growth abilities.
Sephiroth, though, is weak compared to the guys coming up in KH2: Final Mix...
