Sasuke has actually shown interest in Karin. More than Sakura it seems.
No he didn't. He barely showed interest in Sakura but it was still more than Karin. He said from the beginning and treated Karin like a means to an end. For her unique abilities and such. As for Sakura, at least when they were kids, he showed that on some level he did care for her safety and was angered when others hurt her but... he showed that same amount of care to Naruto so I never thought anything of it.
Plus, Karin is clearly unstable and shouldn't be with anyone. She wanted to rape Sasuke in his sleep. I thin even Sasuke would see that as a red flag.

And even with your theory earlier, the fact that Sasuke puts his kid's care in Sakura's hands means he trusts her a lot more than he trusts Karin.
