Arg, you are making me very jealous 
I need to save up some money for a holiday to Canada now! I too live in the UK, in London. I can quite easily get to the countryside though so that's okay 
The most interesting wildlife in central london I've seen is a rat lol. But it is nice to go to Hyde Park and see the ducks and geese etc. Very peaceful
