Any tips on how to sew actual fox fur?
There's a fur store in my area that let me have a bunch of scrap, and fox is among them.

You can buy leather needles at Joannes, they have sharpened tips to slice through the leather. You shouldn't need them for fox fur since the leather is so thin, but they're good to have on hand.
Other than that, always make your cuts on the leather side with a razor, never use scissors or you'll trim the fur.
If you got a fox face and want to keep the ears, try the keywords 'rehydrating fox face', that out to give some useful results with pictures and descriptions.

Ah, shaving fur - like, making it shorter. I have parts of the main pelt, and want to shear it and sew it together with a small plastic form inside to hold the shape. 
Any tips there?

Hmm. I'd suggest not doing that, it'll expose the woolly undercoat and lose a lot of color. If nothing else, try it on a small piece first.
