If you have a bright background and dark hair there are some tricks 
When you have the layers like on 0:22 in the tutorial, so you have two times the Photo and below the background.
Now fill the Background with the new Background you want.
Then set the layer in the Middle in the mode Multiply.
And finally you make a Mask on the Top layer and demask the old background. You will see that you can draw over the hair and just the old background will disappear!
