It's on my keyboard, it's just an apostrophe
On my keyboard (iPad) it comes out like this ‘ which I guess is a ‘smart’ apostrophe. I don’t know how to get a ‘simple’ apostrophe.
Turns out that it's a preference - you can turn off smart quotes in Settings | General | Keyboard | Smart Punctuation.
I would have preferred to be able to choose one or the other as I was typing, but still it's better than nothing.

If you hold down on the key then more options SHOULD pop up I think
Huh, that's weird. I'm guessing it's because I'm European and has a different keyboard. I'd suggest making it a keyboard shortcut or adding it to suggested words, or perhaps having an extra keyboard (I'd say Eng UK) and just switching over to it temporarily when you need to use the '
