Me too. I also thought that Jorge said "Mum". Cause in my opinion, that's what it sounded like when I kept on hearing until I looked it up on Halo wiki.
On the subtitles he says "Ma'am".

Yeah, at first that's what I heard after Jorge said it. Also, I didn't have the subtitles enabled during the first time I played Halo: Reach.
