I thought Applebloom was a bit much. But you know how Applejack is really big on her family and kin? Baldwin thought it would tie in perfectly for Applejack. I'm not sure if I agree or not! 
I have to agree with Baldwin. Her family is likely the biggest part Applejack's life, next to her friends. Although it pains me to say it, Pinkie including Apple Bloom in her plan was needed to truly get back at Applejack.
P.S. Nothing against you, I think the story would be great either way, but scarring little Bloom like that added to the change Pinkie underwent.
