Yeah she looks EXACTLY like someone you could have created! Is it also a fighting game? (sorry I still don't know a lot about touhou, I only played one that was like a chibi fighting game, 12 or 13 or so)

Actually no! If I remember well, you played Hisoutensoku (which is Touhou 12.3). This one is a classic danmaku (bullet hell), like the previous Embodiment of Scarlet Devil (TH06), Perfect Cherry Blossom (TH07), Imperishable Night (TH08), Phantasmagoria of Flower View (TH09), Mountain of Faith (TH10), Subterranean Animism (TH11), Undefined Fantastic Object (TH12) and Ten Desires (TH13)~
Those 'bulle hell' games are like the gaming world's most brutal inventions. XD So almost all of them are like that?
I think so! And guess what? One of the characters in Double Dealing Character (which is TH14, the last one) can reverse your controls. ZUN hates us orz
The main games, yes! But there are some spin-offs :
Four fighting games : Immaterial and Missing Power (TH07.5), Scarlet Weather Rhapsody (Th10.5), Hisoutensoku (TH12.3, which is more an extension of Scarlet Weather Rhapsody...), and Hopeless Masquerade (TH13.5).
Two games where you can shoot the bullets with a camera (these games are reaaaally hard since you can delete the bullets) : Shoot the Bullet (TH09.5) and Double Spoiler (TH12.5).
And one game that doesn't fit anywhere, Great Fairy Wars (TH12.8) where you control Cirno who can freeze the bullets.
There are also six previous Touhou (TH01 to TH06) that were published on a former console that doesn't exist anymore, the PC-98.
A biig series in the end, and I didn't even mentionned the related CDs, books and such %D
So is Hopeless Masquerade like Hisoutensoku but with more characters and stuff?
Immaterial and Missing Power and Scarlet Weather Rhapsody are very similar because they use almost the same gameplay (with notable differences though). Hisoutensoku is just an extension of SWR, which added five playable characters, new stages and attacks, but it's relatively the same thing.
Hopeless Masquerade changed a lot the fighting series because of its new gameplay (no spellcards deck anymore), design and all. But it's my least favourite fighting game, and maybe my least favourite game in the whole series, it just... Doesn't have this Touhou feeling, in my opinion though.
