There are two ways to remove the background from the background list, none of them is as elegant as I'd like, but will do the job: just keep adding backgrounds until the unwanted pic / thumb dissapears.

Or, go to the folder where the unwanted picture is, and name ANOTHER pic with the exact name of the unwated one (you'll have to rename the original first), so when you re-open Winamp it will display the new pic instead.
