If Aldrich devoured Gwyndolin “through and through” him, there wouldn’t be a trace of him left. Also how would it tarnish his name? It’s not like he willingly allowed himself to be eaten.
Well I mean, take a zombie for example. It might be a person you knew, but I bet my bottom dollar it's not gonna be all buddy-buddy with you. That's kind of like our friend, Gwyndolin here. He functions just barely now because Aldritch wills it. Hell, even in the fight he makes horrible squelches of inhuman nature. So I'd say the Gwyndolin that was there has been devoured and is no longer even really there besides the partially digested torso emerging from Aldritch's body.

Don't get me wrong, I'm not saying it's the exact same Gwyndolin we encountered thousands of years ago in the first game. I'm just saying he is there. He's still aware in the sense he can feel pain. He could possibly even still be aware of his surroundings, but still cannot do anything about what is happening, literally trapped inside his own body. It's horrible to think about, but at the same time provides more motivation to put him out of his misery as quickly as possible.

Absolutely, I imagine it's a painful process and much akin to being paralyzed. Makes me think of The Thing and a short story I was reading describing how the Thing devouring people could hear their angry and pained thoughts. Pretty friggin' brutal stuff, especially considering Aldritch is literally consuming not just his body, but his mind too like stated in the Lifehunt Scythe spell description.
