No, Catrina does not live in a castle nor would she hide in it if she had one.
The difference between her and Bon Bon is that Catrina summons her three minions on the first phase using magic and chase after Cuphead and Mugman while Bon Bon's are her subjects that come out of her castle but Catrina still basically attacks or throws objects such as marigolds rather than hiding nope she isn't giving her contract without a fight. Once you've reached the second phase/defeat her minions she no longer summons that trio instead she summons candles(I'm still working on an attack for them but all I know is that they will burn you) and honestly Catrina will attack you in all her phases plus she would think "hiding" would make her a coward tbh 8U
