Actually, hunting people is far, far less fun than hunting animals. If you walk towards a deer in the woods, the deer will hear or see you coming and bolt and be very hard to catch. Unless you look like Jack Nicholson or are waving a chainsaw, if you walk towards a person in the woods, the person will probably wave politely and ask if you're lost or a hiker and if they do run away, the average person would make it about ten feet before tripping on a branch and falling. Animals are quieter, faster, more agile, have much stronger defenses (ever seen a struggling deer kick?) and are used to escaping predators and know the trails and hiding places. The average person would stand there in confusion while they died, trying to figure out what just happened. So unless you're talking about hunting Marine Rangers or something, animals are definitely the thrill route to take.
